Method & Technique

The LMA Bee’s Knees is shaken, fine-strained, and served up.
LMA Bee’s Knees Specification
● 2.00 ounces London Dry Gin
● 0.75 ounce Fresh Lemon Juice
● 0.50 ounce Rich Honey Syrup
● Lemon Peel
Glassware: Chilled coupe or Nick & Nora
Method: Shake and fine-strain
Garnish: Expressed lemon peel
Add the gin, fresh lemon juice, and rich honey syrup to a shaker tin.
Fill the tin with cold, solid ice. Seal the shaker and shake firmly until the drink is very cold, properly diluted, lightly aerated, and completely integrated.
Fine-strain immediately into a thoroughly chilled coupe or Nick & Nora.
Express the lemon peel across the surface of the cocktail. Place the peel cleanly according to the written house presentation and serve immediately.
Shaking is the correct method because the cocktail contains fresh citrus and a dense sweetener.
The shake must do several jobs at once. It chills the drink, adds the water needed for balance, disperses the honey syrup, opens the gin’s botanicals, and gives the sour a lively texture.
A weak shake can leave the drink insufficiently chilled and poorly integrated. The honey may feel heavy, the lemon may seem sharp, and the gin may read as hot even when all three ingredients were measured correctly.
An excessively long shake can add too much water, especially when the ice is wet or badly fragmented. The finished cocktail then tastes thin, quiet, and short, with less gin definition and less honey texture.
Do not train a universal shaking time as if every bar uses identical ice, tins, temperatures, and technique.
Train the endpoint.
The outside of the tin should be very cold. The drink should be fully integrated. The gin should remain recognizable, the lemon should feel bright rather than punishing, and the honey should round the drink without making it heavy.
Use cold, solid shaking ice. Wet, hollow, cracked, or badly fragmented ice gives up water too quickly and reduces control.
Fine-straining is the LMA standard. It removes small ice fragments, lemon pulp, and any small particles that would disrupt the clean up presentation. Fine-straining is not required merely because a drink contains citrus; it is a house choice tied to the intended texture and appearance.
Do not add undiluted honey directly to a shaker full of ice.
Cold makes honey more viscous. It can cling to the jigger, settle against the bottom of the tin, or remain in a concentrated streak instead of becoming part of the drink. That creates inconsistent sweetness and unnecessary waste.
For the approved rich honey syrup, combine two parts honey with one part warm water by volume and stir until completely uniform.
The phrase “two to one” is incomplete unless the house also identifies whether it means volume or weight. Honey is denser than water. A formula measured by weight will not have the same concentration as one measured by volume.
Use only enough warmth to make the honey and water combine easily. Do not boil the syrup or hold it over prolonged heat. Excess heat can flatten delicate aroma and change the honey’s flavor.
Cool the finished syrup promptly. Transfer it to a clean, covered service container. Refrigerate it, label it, date it, and follow the house’s tested holding standard.
Diluting honey with water makes it easier to pour, but it also changes the ingredient’s storage behavior. Do not assume that honey syrup has the same shelf stability as undiluted honey.
Homogenize the syrup before service if it separates or develops a concentration gradient. Check that it remains smooth and free-flowing. Discard it when it no longer meets the house standard.
Measure the syrup completely. Rich syrup left coating the inside of the jigger changes both balance and cost. A consistent measuring technique matters more with a viscous ingredient than with a fast-running spirit.
Fresh lemon juice should be kept cold, covered, labeled, dated, and tasted before service. Lemon changes with variety, ripeness, season, storage, and time after juicing. A written recipe cannot compensate for juice that is oxidized, flat, unusually sharp, or poorly stored.
Do not make uncontrolled bartender-by-bartender adjustments because one lemon or one honey seems different. Taste the completed drink, identify the actual cause, test any change, and revise the written house standard only when the new balance is intentional.
The coupe or Nick & Nora must be thoroughly chilled. Because the drink is served without ice, the glass provides no continuing refrigeration. A warm glass immediately raises the cocktail’s temperature and shortens the period in which the drink tastes tight, bright, and composed.
The lemon peel must be fresh enough to express clean oil. Cut a piece with sufficient colored zest and avoid an unnecessarily thick slab of white pith. Express it over the finished surface so the aroma remains where the guest can smell it.
Do not scrub the entire rim with the peel. A light, controlled application may be part of a written house standard. An oily rim makes the glass unpleasant and can cause the garnish to dominate the drink.
A properly executed LMA Bee’s Knees should arrive very cold, cleanly strained, lightly aerated, gin-forward, lemon-bright, softly honeyed, and aromatic with fresh lemon oil.

Historical Confidence

    Overall Confidence: Medium
    Confidence is High that the Bee’s Knees was established by 1929 as a shaken drink built around gin, lemon, and honey. Cocktails de Paris provides a dated recipe and an attribution to Frank Meier. A separate newspaper article from the same year independently confirms the Bee’s Knees name and its honey-and-lemon character within Parisian social life.
    Confidence is also High that the name drew from the popular 1920s expression meaning something excellent or fashionable. The exact person who first attached that phrase to the cocktail is unknown.
    Frank Meier has the strongest professional-bartender claim. The 1929 French recipe credited him, and his 1936 book presented the drink within the marking system used to identify recipes originated by the author.
    Overall confidence remains Medium because the April 1929 newspaper account directly credited Margaret Brown. Neither source explains the relationship between Brown and Meier, and neither documents the first preparation in enough detail to resolve whether one person devised the drink, named it, requested it, popularized it, or formalized another person’s idea.
    Confidence is High that gin and honey had already been paired in Paris by 1904. Confidence is Low that this earlier Gin and Honey was the direct recipe from which the Bee’s Knees was consciously developed. It is a documented precedent, not a documented line of descent.
    Confidence is Low that the cocktail was invented specifically to hide poor-quality bathtub gin. The explanation is chemically plausible and culturally convenient, but no located contemporary source identifies that as the purpose of the drink. The strongest early sources instead place it in legal Paris bar and social culture.
    The strongest defensible position is: the Bee’s Knees was documented in Paris in 1929; Frank Meier is the leading bartender attribution; Margaret Brown holds a credible contemporary competing claim; and the bathtub-gin explanation is folklore rather than proven history.

    The Bee’s Knees is built around three liquid ingredients and one aromatic finish:
    ● London Dry gin provides proof, juniper, citrus peel, botanicals, dryness, and the drink’s foundation.
    ● Fresh lemon juice provides acidity, brightness, fresh citrus flavor, and tension.
    ● Rich honey syrup provides sweetness, floral aroma, flavor, body, and a rounder texture than plain sugar syrup.
    ● Expressed lemon peel provides the fresh surface oil that reaches the guest before the first sip.
    Water is the unlisted structural ingredient.
    The water introduced during shaking lowers the temperature and proof, softens the lemon’s acidity, opens the gin’s botanicals, and loosens the honey’s density. Without enough dilution, the drink tastes hot, tight, and sharply separated. With too much dilution, it loses gin character, honey texture, and length.
    The Bee’s Knees belongs to the sour family.
    That does not mean it is simply a Gin Sour with a fashionable name. Honey changes the drink in ways that plain sugar does not. It carries its own aroma, flavor, acidity, color, minerals, and texture. The botanical relationship between the gin and the honey becomes part of the cocktail’s identity.
    Replacing the honey with simple syrup may produce a good Gin Sour. It does not produce the same drink.
    London Dry gin is the LMA standard because its juniper, citrus, proof, and relatively dry profile stay recognizable beside fresh lemon and rich honey syrup. A softer contemporary gin can still make an excellent variation, but the bottle must be tested in the complete drink.
    “Gin” is not one fixed flavor.
    A juniper-forward gin gives the cocktail more dryness and structure. A citrus-forward gin can make it brighter but may cause the lemon to feel one-dimensional. A floral gin may connect beautifully with a delicate honey or become perfumed and soft. A cucumber-driven gin can pull the drink away from its classic profile. A lower-proof gin may disappear more quickly after shaking and dilution.
    Honey is equally variable.
    A pale, mild honey usually creates a cleaner and more delicate Bee’s Knees. Orange blossom honey can reinforce citrus and floral notes. Wildflower honey changes with region and season. Darker honey may bring malt, earth, bitterness, smoke, or strong floral intensity.
    No honey is automatically “better” because it is darker, raw, local, expensive, or intensely flavored. The right honey is the one that produces the profile the house wants at the approved ratio.
    The house must choose one gin, one honey, one syrup concentration, and one lemon standard. If any of those changes, the drink has changed even when the written quantities remain the same.
    The finished cocktail should be very cold, gin-led, lemon-bright, softly honeyed, lightly floral, clean, and refreshing.
    It should not taste like honey lemonade with alcohol in the background. It should not be so dry and acidic that the honey disappears. It should not feel sticky, perfumed, watery, or hot.

Guest Story

The Bee’s Knees is an excellent recommendation for guests who enjoy gin, fresh citrus, honey, or bright shaken cocktails that remain balanced rather than sugary.
A useful guest description is:
> “It’s a classic gin sour made with fresh lemon and real honey syrup instead of simple syrup. It’s bright, refreshing, lightly floral, and finished with fresh lemon oil.”
That tells the guest what the drink is, what makes it different, and how it will taste.
The honey does more than add sweetness. It brings aroma, flavor, texture, and a rounder finish that softens the edges of the gin and lemon without hiding either one.
For a guest who is unsure about gin:
> “The honey rounds out the gin’s botanicals and makes the drink approachable, but it still tastes like a proper gin cocktail.”
Do not promise that the guest will be unable to taste gin. The drink is designed to make gin taste balanced—not invisible.
If the guest is concerned that it may be too sweet:
> “The honey gives it a softer, more aromatic sweetness than ordinary syrup, but fresh lemon keeps it crisp and refreshing rather than dessert-like.”
If the guest likes a Whiskey Sour or Gold Rush:
> “It uses the same sour balance of spirit, lemon, and sweetness, but gin makes it brighter and more botanical while honey gives it a soft floral finish.”
For a guest deciding among related gin drinks:
> “A Bee’s Knees is a gin sour sweetened with honey. A Gimlet is tighter and lime-driven, while a Southside adds fresh mint to the gin-sour structure.”
The Bee’s Knees can be a very good starting point for a guest exploring gin. Someone who enjoys it may be comfortable moving next toward a Gimlet, Southside, Clover Club, or another shaken gin cocktail before moving into a drier Martini or a more aromatic stirred drink.
That progression is only a guide. Do not assume that enjoying honey and lemon means the guest will automatically enjoy every gin drink.
The Bee’s Knees is not the best recommendation for someone asking for something long, sparkling, bitter, creamy, frozen, or strongly spirit-forward. It is bright and refreshing, but it is still a short shaken cocktail served up.
Honey also matters to dietary conversations.
The cocktail is not vegan because honey is an animal-derived ingredient. A guest with a honey allergy or restriction should be directed toward a different drink. Do not silently replace the honey and continue calling the result the house Bee’s Knees unless management has approved a separate formula and name.
If the guest asks where it came from:

Where It Came From

The Bee’s Knees entered the firmly located record in Paris in 1929.
That year produced two separate sources, and they do not tell exactly the same creation story.
The first is Cocktails de Paris, a French cocktail book published under the name Rip. It included a Bee’s Knees made with dry gin, lemon juice, and honey and credited the drink to Frank Meier.
Meier was the celebrated Austrian-born bartender who had run the bar at the Hôtel Ritz Paris since 1921. By the end of the decade, he was serving an international clientele of travelers, writers, artists, diplomats, and wealthy expatriates. A polished gin sour made with honey fits that cosmopolitan Paris bar world far better than the usual image of a rough American speakeasy drink.
The 1929 recipe was gin-dominant, with equal smaller proportions of lemon and honey. It was shaken. That establishes the same basic three-part structure bartenders recognize today: gin as the base, lemon as the acid, and honey as the sweetener.
Meier strengthened his own claim seven years later.
In 1936, he published The Artistry of Mixing Drinks. The book explained that recipes carrying a particular mark had been originated by the author, and the Bee’s Knees appeared within that system. His formula again called for gin, lemon, and honey, shaken together.
Taken together, those two books make Meier the strongest professional-bartender attribution. A 1929 source connected the drink to him, and his own 1936 book treated it as one of his creations.
There is, however, a serious competing claim from the same year as the first recipe.
On April 22, 1929, the Brooklyn newspaper The Standard Union published an article about women’s bars in Paris. Near the end, it called the Bee’s Knees the invention of Mrs. J. J. Brown of Denver and Paris, widow of the famous miner, and described it as a sweet combination containing lemon and honey.
Mrs. J. J. Brown was Margaret Tobin Brown: the American philanthropist, social figure, activist, and survivor of the Titanic. She is now popularly remembered as the “Unsinkable Molly Brown,” but that name belongs to her later legend. During her life, she was known as Maggie, Margaret, or Mrs. J. J. Brown—not Molly.
The newspaper does not provide a complete formula, identify the gin, name a bartender, or explain where Brown supposedly created the drink. It does, however, make an explicit contemporary invention claim. Because Brown lived within the same international Paris social world in which Meier worked, the two stories cannot be treated as unrelated simply because one names a bartender and the other names a guest.
Several relationships are possible.
Brown may have devised or named the combination and had a bartender formalize it. Meier may have created it for Brown. Brown may have served or promoted a drink that Meier developed. A preferred mixture associated with Brown may have become a standardized bar recipe through Meier. Similar drinks may also have developed independently.
The surviving evidence does not tell us which explanation is correct.
It is also important to understand that gin and honey were not a new pairing in 1929.
Frank P. Newman’s Paris-published American-Bar included a Gin and Honey in its 1904 second edition. That drink combined gin with a spoonful of honey and was served with iced water alongside. A similar recipe appeared in P. Dagouret’s Le Barman Universel in 1923.
Those drinks were not Bee’s Knees recipes because they did not include lemon and were not presented under the Bee’s Knees name. They do prove that Paris bartenders already knew the combination of gin and honey. Adding lemon placed that pairing into a familiar sour structure.
The cocktail’s name came from one of the era’s best-known slang expressions.
By the early 1920s, calling something “the bee’s knees” meant that it was excellent, fashionable, or the best. The phrase belonged to the same deliberately playful vocabulary as “the cat’s pajamas,” “the snake’s hips,” and other animal-based expressions that flourished during the Jazz Age.
Earlier uses of “a bee’s knee” could mean something tiny, weak, or insignificant. The later meaning flipped that idea into a superlative. No reliable evidence proves that one specific bartender, socialite, dancer, or writer first applied the expression to this cocktail.
The familiar bathtub-gin story is much weaker than the Paris documentation.
According to the story, honey and lemon were added to conceal the harsh taste of illegally made American gin during Prohibition. The explanation sounds reasonable because sweetness and citrus can soften an aggressive spirit. That general observation is not the same as evidence for why this particular cocktail was created.
No located contemporary source about the Bee’s Knees says it was designed to hide bad gin. Its strongest early documentation comes from Paris, where legal, commercially produced gin was available. Honey also contributes aroma, flavor, body, and texture even when the spirit is excellent.
The masking-bad-gin explanation should therefore be taught as later Prohibition folklore—not as the established origin of the recipe.
The three-ingredient gin, lemon, and honey structure was not the only early version. William “Cocktail” Boothby’s 1934 World Drinks and How to Mix Them included orange juice as well. That proves orange was part of at least one important early American formula. It does not make orange juice mandatory in every Bee’s Knees or displace the earlier Paris structure built around gin, lemon, and honey.
Modern bars usually dilute honey with water before service. Early recipes generally called for honey itself. Honey syrup is therefore a service adaptation that makes the defining sweetener easier to measure and incorporate; it is not a replacement of honey with a different ingredient.
The most accurate bartender explanation is this: the Bee’s Knees was documented in Paris in 1929 as a gin, lemon, and honey cocktail. Frank Meier holds the strongest bartender attribution, while a contemporary newspaper credited Margaret Brown. The available evidence does not conclusively identify which person created the first one.

Deep Dive

The Bee’s Knees looks almost too simple to require a deep dive.
That simplicity is exactly why it does.
There are no liqueurs, bitters, bubbles, herbs, egg white, or elaborate garnish to distract from the balance. The bartender has gin, lemon, honey, water, temperature, and technique. If one of those is wrong, the guest can taste it immediately.
What the Drink Actually Is
The Bee’s Knees is a gin sour in which honey is the defining sweetener.
Gin establishes the drink’s proof, botanical profile, dryness, and length. Lemon creates the acidic center. Honey balances the lemon while adding a flavor and texture of its own. Shaking supplies the water and aeration that allow those very different ingredients to become one cocktail.
The drink should still taste like gin.
That point matters because honey and lemon are familiar, approachable flavors. It is easy to keep increasing them until the drink tastes pleasant but loses its identity. Once the gin becomes an indistinct alcoholic background, the balance may be easy to drink, but it is no longer a well-structured Bee’s Knees.
The goal is not maximum honey flavor. The goal is the right honey flavor.
The honey should be clear enough to distinguish the cocktail from a conventional Gin Sour. It should round the lemon, carry through the middle, and leave a gentle floral or varietal note after the swallow. It should not coat the mouth, mute the gin, or turn the drink into honey lemonade.

This is the only Bee’s Knees specification used in LMA service training.
The historical record contains other proportions, direct honey, and an early version with orange juice. Those details belong in the history. They do not create multiple service recipes for the bartender to choose from during a shift.
Understanding the LMA Ratio
The liquid build follows an 8:3:2 relationship: eight parts gin, three parts fresh lemon juice, and two parts rich honey syrup.
That ratio gives the gin a clear structural lead.
The lemon is present at a standard sour level, but the rich honey syrup is held below the lemon because it is more concentrated than an equal-parts honey syrup and because honey contributes more than sweetness alone.
If the syrup were increased casually, the drink could become heavier, more floral, and sweeter at the same time. If it were decreased without testing, the lemon could become hard and the finish could feel thin even if the bartender still perceived some honey aroma.
The ratio only works as written when “rich honey syrup” means the approved house preparation.
A thinner honey syrup contains more water and less honey in every measured ounce. Using it at the same quantity would make the cocktail less sweet, less honeyed, and slightly more diluted before the shake. A syrup made by weight rather than volume would also produce a different concentration.
That is why the syrup recipe is part of the cocktail recipe.
The ratio also assumes the approved gin and the house lemon standard. A low-proof floral gin, a particularly tart batch of lemon juice, and a dark assertive honey can make the written quantities taste completely different from the same build made with a firm London Dry, balanced lemon, and mild honey.
Do not begin by changing numbers.
First confirm that the bartender used the correct bottles, the correct syrup, fresh lemon, complete measurements, sound ice, a full shake, and a chilled glass. Technique or prep failure is more common than a house recipe suddenly becoming wrong.
London Dry Gin
London Dry is a production style, not a requirement that the gin be made in London.
For the bartender, the useful point is flavor. London Dry gin generally presents a clear juniper center, a dry profile, citrus peel, supporting botanicals, and enough structure to remain recognizable after lemon, honey, water, and cold are introduced.
The gin is doing several jobs.
It supplies alcohol and length, but it also prevents the drink from collapsing into sweetened citrus. Juniper provides dryness and grip. Citrus botanicals connect to the fresh lemon. Roots, seeds, herbs, and spices can connect with the honey’s floral and earthy notes.
Proof matters, but it is not the only measure of intensity.
A higher-proof gin often holds its character after shaking more easily than a lower-proof gin. That does not mean the highest-proof bottle will automatically make the best drink. A gin can be high in alcohol and still have a botanical profile that clashes with the honey or feels sharp beside the lemon.
Taste the complete cocktail.
If the gin changes, evaluate the drink after full dilution and at service temperature. Tasting the spirit neat does not show how its botanicals will behave once cold, acid, sweetness, and water are present.
Fresh Lemon Juice
Lemon is not simply “the sour ingredient.”
It provides acidity, aroma, fresh citrus flavor, and the tension that keeps honey from feeling heavy. It also connects the lemon peel garnish to the liquid underneath it.
Freshness matters because lemon juice changes quickly after extraction.
Freshly juiced lemon can be sharp, aromatic, and lively. As it sits, oxygen, temperature, pulp, storage conditions, and sanitation all affect it. Old juice does not always become dramatically spoiled before it becomes bad for the cocktail. It can simply taste flat, dull, bitter, or vaguely cooked.
Lemon also varies before it is juiced.
Fruit variety, ripeness, growing conditions, season, storage, and temperature affect yield and acidity. Two cases of lemons can produce noticeably different drinks at the same written ratio.
The operational answer is not to let every bartender improvise.
Taste the juice. Taste the finished cocktail. If a meaningful seasonal adjustment becomes necessary, management should test it and revise the written specification. Silent changes made by individual bartenders destroy consistency.
Strain or prepare the juice according to the house standard. Excess pulp can create a rougher texture and makes fine-straining slower. Over-processing the juice can introduce bitterness from peel or pith.
Honey
Honey is produced when bees collect plant nectar, transform it enzymatically, reduce its water content, and store it in the comb.
For the bartender, the key fact is that honey carries the place and plants from which it came.
Its flavor depends on floral source, region, season, processing, storage, and age. Color can offer clues, but it does not provide a complete quality scale.
Light clover honey is usually mild and clean. Orange blossom honey often carries soft citrus-floral notes. Acacia honey can be delicate and slow to crystallize. Wildflower honey can range from gentle to highly aromatic depending on what was blooming. Buckwheat honey can be dark, malty, earthy, and forceful.
Those descriptions are tendencies—not guarantees.
“Wildflower” is not one flavor. “Local” is not one flavor. Even honey from the same producer can change between harvests.
For a classic house Bee’s Knees, a mild to moderately aromatic honey usually gives the gin and lemon enough room. A more assertive honey can make an excellent deliberate variation, but it must be tested at the approved syrup concentration.
Raw and minimally processed honey may retain distinctive aromas, but the term “raw” does not guarantee that the honey will be superior in a cocktail. Both of the drink’s important 1929 claims come from that setting.

It identified the same essential ingredients used today and credited Frank Meier. Its proportions were gin-dominant, with smaller matching portions of lemon and honey, and the drink was shaken.

The April 22, 1929 Standard Union article is not a modern retelling. It is a contemporary source.
It explicitly called the Bee’s Knees Mrs. J. J. Brown’s invention and described the combination as sweet, with lemon and honey. Because the article focused on Paris women’s bars, it places the claim in the same city and cultural moment as the Meier recipe.
The absence of a full formula limits what the article can establish. The direct invention language prevents historians from dismissing it.
Margaret, Not Molly
Margaret Brown became posthumously famous as “Molly Brown,” especially through later books, the 1960 stage musical, and the 1964 film The Unsinkable Molly Brown.

The problem is evidence.

Orange Juice
