Method & Technique

The Ramos Gin Fizz is a dry-shaken, emulsified fizz that requires controlled foam development, thorough chilling, and careful carbonation.

Chill an 8- to 10-ounce fizz or narrow Collins glass.
Add the following to a shaker tin:
2.00 oz London Dry Gin
0.50 oz Fresh Lemon Juice
0.50 oz Fresh Lime Juice
0.75 oz Simple Syrup
0.75 oz Pasteurized Egg White
3 Drops Orange Flower Water

Shake vigorously without ice for approximately 15 seconds. This begins aerating the egg white before the cream’s fat is introduced.

Add:
1.00 oz Cold Heavy Cream

Ice
Shake again firmly for approximately 15 to 20 seconds, or until the drink is thoroughly chilled, diluted, and integrated.

Add approximately 1 ounce of cold soda water to the chilled glass. Fine strain the cocktail over the soda. Allow the foam to settle briefly, then add a narrow stream of additional soda through the center until the head rises to the rim or slightly above it.

Serve immediately without ice or garnish.

The LMA method intentionally adds the cream after the initial dry shake. Fat can inhibit egg-white foam, so allowing the egg white to aerate first produces a more reliable structure. The iced shake then integrates the cream while chilling and diluting the drink.

Do not shake the soda in a sealed shaker. Historical preparation sometimes incorporated sparkling water before or during an extended shake, but trapping carbonation inside a modern sealed tin creates unnecessary pressure and risk.

Another useful story is:

This is not the right recommendation for a guest seeking something dry, bitter, spirit-forward, very simple, dairy-free, or egg-free. It also should not be promised as a fast drink during heavy service.

Where It Came From

The Ramos Gin Fizz is one of New Orleans’s defining cocktails and one of the rare nineteenth-century classics whose creator can be identified with strong confidence.

Henry Charles “Carl” Ramos was an experienced bartender and saloonkeeper who worked in Baton Rouge before taking over the Imperial Cabinet Saloon in New Orleans in 1887. There he became famous for an elaborate gin fizz combining gin, citrus, sugar, egg white, cream, orange flower water, and sparkling water.

The drink was originally known as the New Orleans Fizz. It later became so closely associated with its maker that the public began calling it the Ramos Gin Fizz.

The frequently repeated claim that Ramos invented the drink in 1888 should be treated cautiously. Ramos’s authorship is not seriously disputed, but the exact year of creation has not been conclusively documented. The available evidence suggests that he developed the recognizable drink during the early 1890s, most likely between 1892 and 1894. The first definite published descriptions appeared in 1895.

Ramos did not create the fizz family itself. A basic Gin Fizz combined gin, citrus, sugar, and sparkling water. A Silver Fizz added egg white. Ramos appears to have combined that established structure with elements of Cream Lemonade, a nonalcoholic mixture of citrus, sugar, cream, egg white, and sparkling water that he had served earlier in his career. Orange flower water supplied the signature aroma that distinguished his creation.

By the end of the nineteenth century, visitors sought out Ramos’s saloon specifically for the drink. Its preparation required several minutes of vigorous shaking, and Ramos employed additional workers—known as shaker boys—to take over the physical shaking after bartenders assembled each order.

Later accounts claimed that as many as 35 shaker boys worked during Mardi Gras in 1915 and still struggled to satisfy demand. The exact number comes from a retrospective account, but the larger story is credible: the drink was extremely popular, and Ramos operated a genuine production system to handle its labor-intensive preparation.

Ramos moved his operation to the larger Stag Saloon in 1907 and continued serving the drink until Prohibition forced the bar to close in 1919. The Ramos Gin Fizz survived Prohibition, returned to prominent New Orleans hotel bars afterward, and received another burst of national attention in 1935 when Louisiana politician Huey P. Long brought New Orleans bartender Sam Guarino to New York to demonstrate its proper preparation.

    The historical formula was associated with Old Tom gin. That produces a rounder, slightly sweeter variation.
    Use fresh lemon and lime juice in equal proportions.
    Use cold heavy cream. Do not substitute milk in the LMA classic standard.
    Use measured pasteurized egg white for consistency and safer high-volume service.
    Dry shake the egg-white mixture before adding the cream.
    Add the cream immediately before the iced shake. Do not allow cream and citrus to sit together unshaken.
    Shake with ice until the drink is completely chilled and integrated.
    Use orange flower water—not orange juice, orange liqueur, or orange bitters.
    Orange flower water varies in strength. Test the house product, establish an exact drop count, and train the team to follow it.
    Use cold, highly carbonated soda water.
    Serve without ice in a chilled fizz or narrow Collins glass.
    Build a stable, fine-textured head at or slightly above the rim. An exaggerated tower of stiff foam is not required.
    Do not garnish the LMA classic standard.

The Ramos Gin Fizz is a demanding cocktail, but its difficulty is often misunderstood. It does not require twelve minutes of shaking to be legitimate. Its real challenge is achieving aeration, emulsion, chilling, dilution, sweetness, acidity, and carbonation in the same drink without allowing one element to undermine another.

Understanding the Fizz Family
A traditional Gin Fizz contains gin, citrus, sugar, and sparkling water and is normally served without ice.
Adding egg white creates a Silver Fizz.
Adding egg yolk creates a Golden Fizz.
Adding a whole egg creates a Royal Fizz.
Adding egg white, cream, lemon and lime, and orange flower water creates the structure associated with the Ramos Gin Fizz.

The Ramos is therefore not the model for every Gin Fizz. Egg white and cream are specific additions, not universal requirements of the wider fizz family.

Historical Formula Versus LMA Formula
The surviving historical formula associated with Ramos used approximately 1.5 ounces of Old Tom gin, powdered sugar, lemon and lime, egg white, rich milk or cream, orange flower water, ice, and sparkling water.

The historical method differed from most modern preparation. The drink was shaken with ice for several minutes—sometimes with sparkling water already included—until much of the ice had dissolved and the contents became smooth, cold, and uniform.

That extended shaking accomplished aeration, dilution, chilling, and integration, but it is not necessary with modern technique. A controlled dry shake followed by a forceful iced shake can produce the required texture in well under a minute.

The LMA formula uses London Dry gin for a cleaner, more structured backbone and simple syrup for accurate measurement. It retains both citrus juices, egg white, heavy cream, orange flower water, and soda because those ingredients define the drink.

The Twelve-Minute Shake
Long shaking was a genuine part of Ramos’s service, but the commonly repeated “exactly twelve minutes” rule has grown into legend.

Contemporary evidence supports shaking for several minutes, with assistants taking over after bartenders assembled the drinks. Later accounts expanded this into shaking periods of ten, twelve, or even fifteen minutes.

The lesson is not that every Ramos must be shaken for a theatrical length of time. Ramos was working with period ice, equipment, service methods, and a preparation that sought to dissolve much of the ice into the drink. Modern bars use more efficient aeration and chilling techniques.

A bartender who shakes for twelve minutes but produces a warm, overdiluted, flat, or poorly balanced drink has not honored the classic. The standard is the finished result.

Why the Dry-Shake Sequence Matters
Egg-white proteins unfold during agitation and form a network around trapped air. This creates the cocktail’s foam.
Cream contains fat, and fat can interfere with that network. For this reason, the LMA method first dry shakes the egg white with the gin, citrus, syrup, and orange flower water. The cream is added only when the drink is ready for its iced shake.

Sugar also helps stabilize the foam, while citrus contributes acidity and flavor structure. The mixture must then be chilled promptly so the cream and citrus do not remain together at warm temperatures.

A reverse dry shake can also produce strong foam, but it adds handling steps and may create a head that is denser than necessary. A drink mixer or blender can work in a properly designed house system, but it should be treated as an alternate operating method and tested against the LMA finished-drink standard.

Ingredient Roles
The gin supplies the backbone. London Dry gin gives the drink enough juniper and botanical structure to remain recognizable through the citrus, sugar, cream, egg white, and floral water.

Old Tom gin creates a historically appropriate variation with a softer, rounder character. Because Old Tom styles vary in sweetness, the complete formula must be tasted before becoming a house standard.

Lemon provides sharper, more direct acidity. Lime contributes a greener and slightly more aromatic citrus edge. Together, they create a brighter and more complex sour structure than either juice would provide alone.

Simple syrup balances the combined ounce of citrus and supports the drink’s body. Too much syrup makes the Ramos feel dessert-like. Too little exposes the acidity and can make the carbonation feel harsh.

Egg white produces foam and structural lift. It should not make the cocktail taste or smell distinctly of egg. Measured pasteurized egg white improves consistency and reduces the handling risks associated with cracking shell eggs during service.

Heavy cream supplies richness and the characteristic silky center. Milk is generally too thin for the LMA standard, while excessive cream can turn the drink into a heavy dairy cocktail.

Orange flower water is a distillation of bitter-orange blossoms. It is not orange juice and does not taste like ordinary orange flavoring. In the correct quantity, it gives a delicate floral aroma. Too much creates a perfumed, soapy, or medicinal drink.

Soda water provides lift, length, and gentle carbonation. It should make the drink feel lighter, not convert it into a large sparkling highball.

The Vanilla Debate
Vanilla appears in some later formulas, but its place in the original drink is disputed. Former Ramos employees and later historical accounts disagreed over whether a small quantity had ever been part of the house recipe.

Vanilla can reinforce the cream and make the cocktail taste like an orange confection, but it can also push the drink toward a dessert or creamsicle profile.

Vanilla is not part of the LMA classic standard. If a house chooses to use it, it should be identified as a deliberate house variation and measured by drops.

Building the Foam Head
The foam head is part of the drink’s identity, but it should not become the sole objective.

Adding chilled soda to the glass before straining helps integrate carbonation beneath the foam. A final narrow pour of soda through the center lifts the head without aggressively breaking it.

The ideal head should have fine bubbles, remain integrated with the drink, and sit at or slightly above the rim. A towering cylinder of stiff foam is a modern presentation choice, not proof of historical accuracy or superior flavor.

The drink underneath the foam must remain cold, balanced, and gently carbonated. A spectacular head on an unpleasant cocktail is a technical failure.

Common Failures
If the foam is weak, check the egg-white measurement, dry-shake intensity, cream sequence, and presence of fat or oil inside the equipment.
If the drink is chunky or curdled, the dairy and citrus may have sat together too long, the cream may not have been fresh, or the mixture may not have been shaken and chilled promptly.
If it tastes like perfume or soap, too much orange flower water was used.
If it tastes like a milkshake, the cream or sugar is excessive, the citrus is weak, or there is insufficient soda.
If it tastes thin, the cream or egg white may be undermeasured, the drink may be overdiluted, or too much soda may have been added.
If it tastes sharp, check the citrus-to-sugar balance and total dilution.
If it is flat, the soda may be warm, poorly carbonated, added too early, or handled too aggressively.
If it smells strongly of egg, the egg product may be old, the drink may be warm, or the citrus and floral aroma may be insufficiently integrated.

Service and Menu Reality
The Ramos Gin Fizz uses dairy and egg, requires multiple fresh ingredients, takes longer than an ordinary sour, and demands more cleanup and bartender attention.

That does not make it unsuitable for professional service. It means the house must plan honestly.

A bar offering the drink should have:
Chilled, appropriately sized glassware
Premeasured or efficiently dispensed egg white
Properly stored cream
Fresh lemon and lime juice
A calibrated orange flower water dropper
Cold, reliable soda water
A written shaking and pouring sequence
Clear egg-and-dairy allergen communication

The cocktail is particularly appropriate for brunch, hotel bars, New Orleans-inspired programs, cocktail-focused restaurants, and controlled service periods. In a high-volume bar, it should not be added merely for prestige unless the team, station, and ticket-time expectations can support it.

A properly made Ramos Gin Fizz should be cold, silky, creamy, citrusy, lightly floral, finely foamed, and gently carbonated. It should not be warm, flat, chunky, stiff like meringue, aggressively perfumed, excessively sweet, overly sour, or heavy enough to drink like a dessert shake.
